Easy Banana Bread

The most often cooked recipe in my kitchen is probably Banana Bread. It’s probably because we often have bananas left going spotty in the fruit bowl and I hate throwing food out. Recipes must be quick and easy for me to use them over and over so this is an absolute winner – just mix, pour and bake. This Banana Bread is easy enough for even toddlers to make.

The best bananas to use are those which are over-ripe and spotty as these have the most flavour and will be easiest to mash. They will add moisture to the bread and make the Banana Bread beautifully tasty.

This recipe is the perfect one for the kids to make. Two of my grand-kids made this in about 10 minutes (plus cooking time) with little help from me. They wanted me to video them and post it on YouTube so check it out.

Nana’s Easy Banana Bread

This is the easiest and tastiest Banana Bread recipe you will ever try. It's one of the most used recipes in my kitchen and perfect for using up those over-ripe bananas.

Equipment

  • medium bowl
  • Measuring cups and spoons
  • loaf baking tin

Ingredients

  • 2 over-ripe bananas mashed
  • 1 60g egg
  • cup butter melted
  • ¾ cup sugar
  • 1 cup milk
  • 1 tspn cinnamon optional
  • 2 tspn nutmeg optional
  • ½ tspn salt
  • 1 squeeze honey optional

Instructions

  • Preheat oven to 175°C and grease and line a loaf tin with baking paper
  • Mix all ingredients together in the bowl
  • Pour into the prepared loaf tin
  • Bake for 50 minutes or until a skewer inserted in the centre comes out clean
