Dreamy White Christmas

Christmas has always been a time of year when there’s lots of cooking in my kitchen – slices, Rum Balls, Christmas Cake, Pudding, and Pavlova. The list goes on and on. I love every minute of it. Usually I try to try a new recipe every year but I always have those recipes I keep going back to year after year. Some of my favourites are Gingerbread Men, Traditional Christmas Pudding, Traditional Eggnogg, and Coconut Ice. Dreamy White Christmas is one of those recipes.

It’s so easy and quick, it’s great for the kids to make. Just measure, mix and pour into a cake tin to set. What could be easier?

It’s also one of those recipes that you can substitute ingredients if you don’t like one of the ones in the recipe or you’ve run out. Substitute the sultanas for more cranberries. Substitute the macadamias for almonds. You get the picture – so versatile.

This year I also tried some variations on Traditional Coconut Ice with 2 new varieties – Coffee Coconut Ice (definitely my favourite) and Baileys Coconut Ice. They are amazing, even if I do say so myself. I also made an amazing Eggnogg Cheesecake. My husband says is my best one ever (and he’s tried a few over the years).

Dreamy White Christmas

An easy and decadent Christmas treat full of the traditional flavours of Christmas

Ingredients

  • 500 g white chocolate Use a good quality eating chocolate
  • 1 cup Rice Bubbles
  • 1 cup dried apricots Chopped
  • 1 cup sultanas
  • 1 cup died cranberries
  • 1 cup macadamias Chopped
  • ¾ cup pistachios Chopped
  • 1 tsp ground cardamom

Instructions

  • Line a 20cm -25cm square cake tin with baking paper
  • Melt the white chocolate in the microwave, 30 seconds at a time, stirring between each blast in the microwave
  • Meanwhile, place all other ingredients in a large bowl and stir to combine
  • Pour the melted chocolate onto the dry ingredients and mix through thoroughly
  • Pour the mixture into the lined cake tin and pat down into the tin
  • Place in the fridge to set for a minimum of 2 hours
  • Remove from the fridge, remove the White Christmas from the cake tin and slice into 16 pieces. Enjoy!
