I loooooove chocolate mousse and what better type of mousse than a Baileys Chocolate Mousse. Add some Chantilly Cream and berries and you have a winner.
It doesn’t get much better than that.
This Bailey’s Chocolate Mousse is easy to make and looks very impressive – perfect for a special occasion like Valentines Day.
I have served it in a pretty tea cup. You could also serve it in a cute little jar or a wine glass.
This recipe is very versatile – swap the Bailey’s for Salted caramel sauce and you have a salted caramel mousse, change the Bailey’s for coffee liqueur and you have a Mocha Mousse. Swap the Bailey’s out for some Nutella and you have a Nutella Mousse. You are only limited by your imagination. Why not experiment and see what marvellous creations you can come up with. - 250 ml thickened cream
- 1/4 cup caster sugar
- 150 g dark chocolate I used Lindt 70%
- 1 tspn olive oil
- 30 ml Bailey's Irish Cream
- 1 batch Chantilly Cream
- raspberries and blueberries to decorate or you could use strawberries
- pretzels to decorate
- 50 g dark chocolate extra
Ingredients

- Melt oil and chocolate together in the microwave in 30 second lots, stirring each time. Set aside to cool to room temperature.
- Whip cream and caster sugar together.
- When chocolate mixture has cooled, add to the whipped cream and mix thoroughly
- Add Baileys and mix to combine.
- Divide chocolate mousse between 4 glasses, cups or jars. Add some Chantilly Cream and strawberries
- Melt additional chocolate Dip a few pretzels in the melted chocolate and set aside to set. Decorate the tops of the mousse with the pretzels.
This recipe is great with dark chocolate but if you don't like dark, you can use milk chocolate.
