Christmas Eggnog Cheesecake is a very special recipe which my husband says is the best cheesecake I have ever made. Made with a beautiful home made gingerbread base and a smooth, creamy eggnog cheesecake filling, it is impossible to refuse.
250gginger biscuitsI used my Gingerbread Men recipe. See Notes
85gbuttermelted
Filling
500gcream cheesesoftened
1 cupcaster sugar
1½cupEggnogI used my Eggnog recipe but you can substitute store bought
½tspcinnamon
¼tspnutmeg
450mlthickened cream
2tsppowdered gelatin
¼cupboiling water
To Decorate
1recipe Chantilly CreamSee notes
1pinchground nutmeg
Instructions
Base
Crush Ginger biscuits in a blender or with a rolling pin until fine crumbs
Mix in melted butter and stir through until well combined.
Press into the base and up the sides of a 20cm spring-form tin, which has been greased and lined with baking paper
Refrigerate until firm (about 20 minutes)
Filling
Add cream cheese, sugar, eggnog, cinnamon, nutmeg and cream into a blender or mixer and mix until well combined and smooth
Dissolve gelatin powder in boiling water and add to cream cheese mixture. Blend or mix again until well mixed and smooth
Remove base from fridge and pour mixture onto the base. Return to the fridge to set (about 2 hours
Decorate
Make up Chantilly Cream (see notes) and pipe onto the top of the cheesecake as desired
Sprinkle nutmeg lightly over Chantilly Cream
